Our Caseins Specialists

Caseins in general have beed a very disscused topic within the Holstein industry for a longer time already. The majority of attention is paid to beta caseins and kappa caseins.

When talking about beta caseins, there are 3 forms of them contained in cow milk: A1A1, A1A2 and A2A2. A demand for milk with A2 caseins has been rising worldwide as according to some studies A2 is better than A1 for human digestion.

On the other hand cheesemakers are focused more on kappa caseins, especially on BB type. BB caseins allow milk to clot faster and produced cheese is firmer.

Some milk consumers and cheesmakers are willing to pay higher prices for milk containing the desirable types of caseins.
